Here, you don’t just come to eat: you come to be taken care of. -The way back For twenty-seven years, the mountaineers descending from Anboto slow their pace when they see the smoke. They know the fire is lit, the beans are just right, and the table is set without needing to call. There are hungers that can only be satisfied by coming down from the mountain. -The door that is always open Korostondo is a farmhouse where the mountain stops and the table begins. It’s not in trendy guides; you find it by the smell, just like the first mountaineers did nearly three decades ago. There’s no fancy menu or strange names. Just the usual, made as always. And that’s the hard part. -Here, time cooks slowly The red beans are made in a pot, over low heat, with chorizo, blood sausage, bacon, and chili pepper. The bread is kneaded and baked here, with sourdough. The txuleta — from old cows — waits patiently for the perfect grill. There’s also fresh fish and seafood, and a vegetarian menu made with the same care. -Under beams from another century You eat under century-old beams, with light filtering through old tiles and the smell of the grill rising. Three spaces: the intimate corner behind the bar, the large dining room, and the private room for celebrations.
